Fatty acids, which are building block of fat, are long chain of carbon and hydrogen atoms. Essential fatty acid are those needed by human body that are only be obtain through food. Some fats are harmful.
Unsaturated Fats:

Saturated Fats:

Trans Fat:
Trans Fat are unsaturated fat which have been partially saturated with hydrogen to extend their shelf life. Unfortunately these trans fat are found to elevate “bad” cholesterol and should be avoided
